Jalousie Hilton Resort & Spa is nestled between the Piton Mountains on the southwestern coast. Sumptuous Caribbean cuisine and a variety of menus and moods create a tempting culinary experience.

The resort is spread over 325 lush acres of tropical forest, banana trees, waterfalls and natural springs, featuring 75 Villas and 37 Villa Suites with spectacular views of the Piton Mountains and Jalousie Bay.

The resort offers 112 guestrooms in one-story, pastel-colored, wood-and-fieldstone villas clustered in groups of eight to 12 some 300 feet above the beach on a steep, forested hillside. The tropical forest nearly engulfs each cluster, rendering villas invisible from the beach and main building. Complimentary shuttles transport guests up and down the hill around the clock.

Rooms feature plunge pools fronting partially covered, terra-cotta-tile sunning patios furnished with two lounge chairs, wet bars, minibars, and two-chair dining sets. Inside, fans hanging from peaked wood ceilings combine with windows that open to offer a cooling alternative to rooms' air-conditioning.

Decor and furnishings include pastel walls, white tile floors, pottery, white furniture with gold trim, dressing benches, and cushioned dark-rattan chairs. Sheer violet fabric is draped above beds' heads. Makeup alcoves comprise mirrors, counters, and benches. Green marble bathrooms include stall showers and separate shower/tub combinations. Televisions and VCPs provide entertainment, with video movies available for rent.

The Plantation - Air-conditioned restaurant located on hillside with sea view through fabric-draped windows. High wood ceiling, marble floor, rose and white linens. Starters such as Brie Tart, Pork Spring Rolls. Main courses feature Herb-crusted Salmon, Spicy Sautéed Shrimp, Almond/Saffron-crusted Lamb Loin, Glazed Strip Steak. Dinner only. Dress code: long pants, collared shirts for men.

The Bayside - Beachside open-air restaurant serving lunches of salads, sandwiches, light meals. Creole dinner buffet Tuesdays and Fridays featuring beach bonfire and Caribbean show (fire eater, limbo, live band).

The Pier Restaurant - Casual, two-level, open-air restaurant adjacent to pier on rocky waterfront. Open five nights weekly for dinner only. Starters such as sautéed shrimp, goat cheese with roasted peppers. Main courses include strip steak, seafood stew, pork tenderloin, grilled fish.

The Balcony - Located in Great House (main building). Wood deck with view mountain/sea view from oversize rattan chairs. Saturday-night candlelight dinner with set menu.

Palm Court - Open-air lounge with sea and Petit Piton views. Big-screen television, pink-marble bar.
Nightly entertainment at the Pier Restaurant, entertainment center.

Individual pastel cottages are scattered across the Piton mountainside, and all of the villas have plunge pools (only the Sugar Mill rooms do not). The outdoor spa facility offers massage service, cold plunge, whirlpool, saunas and exercise equipment

The resort comprises a steeply pitched, densely forested, 325-acre layout cupped between the Pitons (each approximately 2,600 feet), with Petit Piton's sheer stone wall on the north side seemingly close enough to touch. This dramatic setting attracts guests seeking snorkeling, diving, hiking, and other outdoor activities as well as couples desiring privacy-with-a-view and 24-hour room service in their hillside villa rooms.

Amenity highlights: Petit Piton and Gros Piton create a mile-wide bay extending out from the resort's 150-yard beach of (imported) light-colored sand. Petit Piton drops into the sea directly adjacent to the resort. Floats are anchored near a snorkeling/scuba diving area beside the mountain's sheer wall. Freshwater swimming is available in a 150-by-50-foot oblong pool surrounded by a sundeck furnished with cushioned lounge chairs and umbrellas.

Insider tip: An open-air café next to the resort offers a seaside setting for Caribbean-accented meals. Wednesday night features what is widely regarded as one of St. Lucia's best Caribbean shows (music, dance, stilt walkers, fire eaters). Lord Glenconner, a Scotsman living next door who bought and developed Mustique as a getaway for Princess Margaret, Mick Jagger, and others rich and famous, owns and frequents the café.
Adjacent to Petit Piton's sheer rock wall as well as to tennis and squash courts, a health-and-beauty spa and a fitness center are situated 400 feet up the resort's hillside. The air-conditioned spa offers massage, body treatments, hydrotherapy, facials, waxing, and hair and nail care. (Treatments are also available in a beachside gazebo.)


Features include a sulphur mud bath for two, with mineral waterfall shower and spa-cuisine lunch, and an open-air treatment cabana sheathed on two sides with palm fronds and open on the other sides to views of Gros Piton and the sea. Those views are also available from a spa tub and two cool plunge pools isolated up a stairway in front of the spa.

The complimentary open-air fitness center includes mirror wall panels and contains a universal gym, cardio machines, free weights, and a workout area for complimentary aerobics, stretching, and tae bo classes and Pilates workouts (fees charged). A computer in a business center offers dial-up Internet connections (surcharge). An air-conditioned children's club provides complimentary supervised activities for youngsters age 5–12.

For a fee, the resort offers water-taxi service to the picturesque French-colonial capital of Soufrière, a 10-minute trip.
